All these years as an adult in possession of an oven and I had yet to make Nana Altus's mock yeast cake, or potato cake as I remember it. So I finally made it.
Of course, Nana's recipe that I had photocopied from Mum was a little short in detail, as though she wrote it down from memory. I had to draw heavily from my baking common sense and a good deal of "how would Nana do this?" imaginings.
And, naturally, I didn't have the exact same large rectangular tin that she did, but I improvised.
And it turned out just as I remembered. Just not quite because of the wrong tin. Still, the true test will come when Mum comes up next for a taste test. It's sitting in the deep freeze as we speak, just like Nana's always did!
